Easy Cheesy Quick Bread Recipe
Quick breads are perfect for busy cooks. They require no rising, and get their lightness from baking powder or baking soda. They come in both sweet and savory varieties, and are generally quick to assemble before baking. Quick bread batter can be baked in muffin pans, loaf pans, casserole dishes or cake pans. When I am in a hurry, I like to make the following Easy Cheesy Quick Bread to accompany soup or salad meals. It only takes 10-15 minutes to put together and bakes while I prepare the main dish.

For variations you can add bacon, omit the green onions, or change the variety of cheese.

12 slices

1 cup milk
1/4 cup melted butter
1 egg
1/4 teaspoon hot pepper sauce

2 cups flour
1 teaspoon baking powder
1 teaspoon salt
1 teaspoon sugar

1 cup shredded sharp cheddar cheese
3 chopped green onion

  1. Preheat oven to 350°. Spray a standard 9" x 5" loaf pan with non-stick spray.
  2. Measure the milk, melted butter, and egg in a mixing bowl; whisk until smooth.
  3. Place a fine strainer over the mixing bowl; measure the flour, baking powder, salt, and sugar into the strainer and shake through. Mix just until incorporated.
  4. Fold in the cheese and green onion.
  5. Transfer the dough to the prepared loaf pan and pat to even out. Bake 40-50 minutes or until a toothpick inserted into the center comes out clean.
  6. Remove from the oven, let sit 10 minutes, and invert onto a cooling rack. Slice and serve warm or cold with real butter.
