Garlicky Steak & Parmesan Potato Sheet Pan Dinner
Sheet pan dinners are quick and easy; they usually include a full well-balanced meal such as meat or poultry, potatoes or other starch, and vegetables. Almost anything can be put on a sheet pan and baked or roasted. One favorite is the following Garlicky Steak and Parmesan Potato Sheet Pan Dinner . This one includes chunks of red potatoes and tender steak with plenty of garlic and Parmesan cheese, as well as asparagus or broccoli. It is delicious and can be completed start to finish in less than 30 minutes.

Even Mr. Picky, my most finicky, but cutest, Official Hancock Taster loved this dinner. You can vary the vegetable you put on the sheet pan, and add several different ones if you like. You can use your favorite type of steak (or whatever cut you can afford with the horrible high inflation), and since it is cut into smaller chunks, it will be tender in the minimum cooking time.

6 Servings

2 pounds small red potatoes, scrubbed and quartered
4 tablespoons vegetable oil, divided
6 tablespoons Parmesan cheese, divided
3 cloves minced garlic, divided
Salt and freshly ground black pepper, to taste

1 1/2 pounds beef sirloin steak, or tenderloin steak cut into 1" chunks

1 pound fresh asparagus, snapped

  1. Preheat oven to 450°.
  2. Place the quartered potatoes in a large bowl; add 2 tablespoons oil, 2 tablespoons Parmesan cheese, half of the garlic, and a sprinkling of salt and freshly ground black pepper; stir until the potatoes are coated.
  3. Transfer the potatoes to a sheet pan (11" x 17" jelly roll pan) and spread out into 1 layer.
  4. Roast the potatoes 15 minutes. Remove from the oven.
  5. Add the beef to the bowl, toss it with 1 tablespoon vegetable oil, 2 tablespoons Parmesan cheese, and remaining garlic; sprinkle with salt and pepper.
  6. Using a metal spatula, push the partially cooked potatoes to one side of the sheet pan.
  7. Arrange the beef in one layer in the middle of the pan.
  8. Place the asparagus next to the beef, drizzle with the remaining tablespoon of oil and sprinkle with the remaining Parmesan cheese.
  9. Place the sheet pan in the oven and let roast 15-20 minutes or until the beef is cooked through. Serve.
